The Kitchen Of A Broke and Lazy Post-Grad: Let’s pretend to like lettuce wraps!

I can’t cook. There I said it.

Ok, so I use the term “can’t cook” loosely. If by cook you mean go by step-by-step instructions and making a complete mess of the kitchen not knowing/caring the difference between a “dash” and a “sprinkle” then that’s me. I can turn the stove on and whip up something with chicken and vegetables fairly easily…even though I’m usually too lazy to defrost the chicken first before putting it on the stove.

Anyways, since living on my own and paying a fat rent check at first of the month while simultaneously being super busy with an on-the-go schedule I decided to create a new segment of my blog. In my findings (backed by zero scientific research), I’ve noticed that most people who fall into this said demographic could benefit to some ~wise words~ from the gal who definitely does NOT belong in the kitchen (nor wants to be).

It’s worth noting that you’ll be less than impressed with what I’ve came up with, but using the few resources (and funds) that I have, I think you’ll find yourself using this section of my blog more often than you’d like to admit.

Alrighty let’s get this started! Today I had some time on my hands, but I also didn’t feeling cooking–surprise, surprise. So I present you with this:

I call this masterpiece “Let’s Pretend To Enjoy Lettuce Wraps More Than Bread.”

This takes 5 minutes tops to whip up and costs less than a dollar per wrap..not bad huh?

4 (or however many your stomach desires) romaine lettuce wraps
1/2 cup of non-fat cottage cheese (or nonfat plain yogurt)
4-6 slices of low sodium turkey breast
1/4 diced onion
honey mustard
1 chopped hard boiled egg (optional)

I don’t think I need to explain how exactly to put this together but since that’s what all the food blogs do, I guess I will for formality purposes.

Measure out 1/2 cup of nonfat cottage cheese and spread it out through the middle of the 4 wraps. Place turkey on top, then sprinkle diced onions and chopped egg on top. Drizzle honey/dijon mustard on top. 

I feel stupid for telling you how to do that, but whatever. There you have it…super easy lunch on the go that won’t break your bank (and are actually tasty). I want to say “Oh these are just as easy to eat as a bread wrap!” but I won’t lie to you. Bring a fork and a napkin, I’ll let you know when “romaine bread” becomes easier to eat.
